We have a confession to make. While we were in Egypt, we became addicted to koshery. Hopelessly addicted — we actually ate it for 7 meals out of the 6 days we were in Egypt!

This is Egyptian 'koshery', a mixture of rice, lentils, chick peas, and macaroni, topped with tomato sauce and fried onions. It's totally vegetarian, and totally delicious!

When you're served your bowl of koshery, you are also given some hot sauce, vinegar, and herbs to make it more to your liking

Koshery is made in restaurants, homes, and road-side fast food carts. This is a road-side stand near Coptic Cairo
When you get a chance to sample this delight, beware — once you’ve tried it, you too may become as addicted as we were!

Well, Mam, you tell me if your clients can eat it: it’s totally veg, but… full of gluten. Some kind of noodle, some grain, something like macaroni, maybe some other starch, and then crispy onions and seasoned tomato sauce and then some garlic and vinegar to taste. Totally delicious, but probably lower in vegetables than you’d like.
Reading this recipe, I think you are right. I will have to make “some” modifications and definitely add some more veggies even is it is just on the side.
